Mike has been cooking from an early age and has gained experience throughout Europe. His philosophy on food is simple;
”A Head Chef is nothing without a good team around him and I am currently building my team. When I came to Glasson I found an excellent local Chef, Norman Johnson already in place and brought with me my Sous Chef Damian Sylwester Blawat – who is an absolute perfectionist - both of whom I could not do without. Diarmuid Byrne, Food and Beverage Manager, and his team are also invaluable.
Creation is my favourite word. The majority of the dishes on my menus are my own creations. I believe in using seasonal, fresh and Irish Produce as often as I can. I don’t use flour in my sauces or soups as I do not want to mask any of the natural flavours.”

For those seeking a more casual affair, in the Lakeview Café & Bar, guests can enjoy a light snack and a great pint of Guinness while relaxing in front of the warm log stove. The delicious Scones are a real favourite with Golfers before venturing out onto the Championship course.
